Our Fused, early harvest, Chilean green lemon (Eureka Green Limonato) was made by crushing green Arbequina olives alongside estate grown green Eureka Lemons in April! The result is an incredibly complex, pungent fusion. By harvesting unripe lemons and olives grown side by side, we achieved maximum green lemon aroma in this powerfully fragrant and floral oil. Super concentrated, a little bit goes a long way!

Made with fresh Blood Oranges and early harvest certified organic Tunisian olives, we crush the fresh produce together to make this beautiful (agrumato) -a combination of whole, fresh citrus fruits crushed with early harvest olives. Our Whole Fruit Blood Orange is exceedingly versatile; use it on fish, in desserts, baking, with seafood, chicken, pork, fruit, salads and more. Enjoy this blended with our Cranberry-Pear White Balsamic Vinegar, grapefruit white balsamic or dark chocolate balsamic.

This will be in stock in alternating seasons when our Blood Orange is not available. Made with fresh Navel Oranges and early harvest Australian Arbequina olives. We crush both together to make this whole fruit fusion; a combination of whole fresh citrus fruit crushed with early harvest olives. Our whole fruit Navel orange is zesty, bright, and exceedingly versatile; use it on fish, in desserts, in baking, with seafood, chicken, pork, fruit, salads, and so much more.

Traditionally used in North African and the Middle Eastern cuisine, Harissa is a condiment which is made from dried hot chili peppers, garlic, toasted caraway, toasted coriander, and toasted cumin, pounded into a paste with olive oil. Made with Certified Ultra Premium Extra Virgin Olive Oil and copious amounts of chili pepper to make our infused olive oil very spicy, and one of our hottest in our collection.

Our delightfully spicy and pungent Chimichurri Verde Olive Oil is made with a base of fused green chili olive oil flavored with a medley of spices and herbs including garlic, cilantro, parsley, oregano, black pepper, and red chili. We recommend using it to sauté or grill veggies and marinate chicken, shrimp, beef, or pork. It works exceptionally well with beans and legumes, including drizzling over hummus. From the Barbary Coast of North Africa, this Tunisian Baklouti pepper is rare and unique to this region. This is fused oil is the only example of this fruity and spicy green chili olive oil in the world. Early harvest organic olives and an almost equal ratio of fresh, whole green Baklouti chilies. Baklouti adds a savory, tantalizing kick to salsas, marinades, soups, grilled foods, vegetables, and more. *Baklouti will rotate harvest seasons with our Jalapeño.

Our South Australian Jalapeno fused olive oil is both fruity and spicy. It’s made by combining fresh green, early harvest Frantoio olives with a large portion of FRESH Jalapeno peppers! At harvest we used double the volume of peppers than we traditionally do to really maximize the flavor. These two fresh ingredients are simply crushed together and mixed in a malaxer which releases and combines the green essential oil of the fresh peppers with the olive oil. *Rotates with our Baklouti.
Our Pure Japanese Toasted Sesame Oil is our only current in store oil that does not contain any olive oil. It is incredibly flavorful and absolutely delicious!
Specialty Oils

Our Japanese dark toasted sesame oil is made from high quality sesame seeds roasted slowly under low temperature, and then pressed in small batches in Japan in the traditional style. It has tremendous depth of flavor and mouth-feel. Use with vegetables, in stir fry, baking, marinades, grilled meats and poultry, hummus, dressings, and spreads, paired with Honey Ginger White Balsamic, Honey Serrano Vinegar, or Sicilian Lemon White Balsamic. Our Ultra-Premium White Balsamic is the highest quality white balsamic condiment grade in the world. It’s unique in North America and exclusively made for our discerning consumers from Italian Trebbiano, Albana, and Montuni grapes which add body, complexity, and richness that Trebbiano grapes alone cannot achieve. The grapes are entirely hand-picked by experienced workers who select only the sweetest clusters for maximum Brix content and created through natural fermentation. It contains a blend of white grape must with 100% Italian Barrel Aged White Wine Vinegar which are both made from Albana, Trebbiano and Montuni grapes grown in the region of Modena, Italy exclusively. The grapes are left to dry in the sun (a very old artisan method) for up to 15 days - an exclusive family practice of our balsamic maker. During this period, the natural sugar, flavor, and body in the grapes is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. The traditionally cooked grape must is lightly filtered to remove any skins from the cooked must before being placed into new white oak barrels for maturation and aging to an amazing 1.28 density and 4% acidity. Certified to be free from any additives including thickening agents, sugar from sources other than grape must, colors, dyes, and preservatives.

White Balsamic Vinegars
All of our delicious sweet balsamics are authentic aged balsamic from Modena, Italy, produced and aged in wood barrels using the
traditional Solera System.
They do not contain any added sugar, sweeteners, caramel color, preservatives, or artificial ingredients, as well as only the naturally occurring sulfates.
They naturally contain the "mother" and extremely high
wonderfully healthy phenols!

Our Ultra-Premium White Balsamic is the highest quality white balsamic condiment grade in the world. It’s unique in North America and exclusively made for our discerning consumers from Italian Trebbiano, Albana, and Montuni grapes which add body, complexity, and richness that Trebbiano grapes alone cannot achieve.

The Blenheim Apricot variety is both sweet and tart with an intensely floral aroma of honeysuckle flowers. We’ve married the lovely floral characteristics of this apricot with our Ultra Premium White Balsamic Condimento. The resulting collaboration is bright, clean and absolutely delicious! Great with grilled chicken/poultry, pork, in sparkling water as a spritzer, as a glaze, served with cheese, for dressing cut up fruit, in marinades and dressings. Pairs fantastically with many.

This White Balsamic is clean, crisp and very tart and boasts a lovely deep, rose blush. It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Our Coconut White Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of coconut. It makes a fantastic dressing or marinade and is divine paired with our Persian Lime, Onion & Cilantro Olive Oils or Toasted Sesame Oil. This balsamic is progressively aged in wood barrels according to the Solera Method. It is PGI (Protected Geographic Indication) certified to come from Modena, Italy.

Made with White Trebbiano Grape Must, our White Peach Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy. Extremely adaptable, it can be paired with any of our Extra Virgin Olive Oils, as well as our flavored oils to make a light, tart vinaigrette.

Our golden pineapple balsamic is sweet and tart with the heady aroma of fresh ripe pineapple. This amazing, zesty balsamic is the perfect complement to fruit salads and fresh berries. It adds substantial flavor without discoloring salads. Notes: Try pairing with soy sauce, ginger and our garlic extra virgin olive oil for an amazing marinade.

If you take a hint of apricot, combine it with the floral notes of golden-ripe Japanese plums, and the luscious, sweet-tart characteristics of our aged white balsamic from Modena Italy. Suggested Pairings: Persian Lime Olive Oil, Lemon Olive Oil, Garlic Olive Oil, Toasted Sesame Oil, Orange Olive Oil, and Basil Olive Oil.

This sparkling ruby jewel-toned white balsamic owes its tart, crisp flavor to Juicy California Pomegranates and Floral Winter Quince. It’s made from authentic white balsamic condimento, aged for up to 12 years in Modena, Italy. Pairs beautifully with Blood Orange Agrumato Olive Oil, Persian Lime Olive Oil, and fruitier extra virgin olive oils such as Hojiblanca, and Picual.

Discontinuing in store for Red Apple Dark Balsamic. Incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it’s also not an apple that travels or stores well so it is best enjoyed during its relatively short season and isn’t typically shipped far. It’s grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream colored flesh.

Playfully tart and pleasantly sweet, our Sicilian Lemon White Balsamic has a perfectly balance acidity and a crisp, lemon flavor and aroma. Fabulous with seafood, in dressings or in mixed drinks. Pairs well with Roasted Sesame oil for a fantastic salad dressing or marinade!

Being discontinued in shop! Sweet, floral Key Lime White Balsamic. Use in shrubs, marinades, cocktails, pickles, over berries or cut up fruit. Makes a wonderful glaze or in marinades and dressings. Excellent mixed with sparkling water for a refreshing, crisp beverage, to glaze poultry, seafood, vegetables, pork, and much more! Pairs well with many olive oils!

Our specialty vinegars are non balsamic vinegars that we carry in shop. Wonderful bursts of flavor to craft vinaigrettes, marinades, or stand alone flavor profiles in your dish.

When you first taste our Champagne White Wine Vinegar, you’ll instantly fall in love with it’s smooth and elegant flavor. That’s due in part to the way in which it is produced. Unlike other Champagne vinegar's, this one never undergoes a pasteurization process. By eliminating this step, the vinegar possesses a lovely, rich base. Notes: Imported from the Champagne region of France, the vinegar is a divine ingredient in salads, or try in homemade mayonnaise; simply whisk with EVOO.

With a complex nose boasting oak and spice, our barrel aged red wine vinegar is robust and rich with a pleasing zing. Perfect for deglazing pans, vegetable salads, beets, dressings, pork and chicken. Product of Italy.

Amazingly complex - makes a great addition to salsa, Ceviche, a Bloody Mary & shrimp on the grill. Delicious drizzled over sliced tomatoes and fresh mozzarella cheese. Add to dressings for leafy green, potato, pasta and rice salads.

Discontinuing in store. Our lovely, raw, unfiltered, Organic Apple Cider vinegar comes from small batches made right in Northern California's Apple Country. It is rich in phenols and contains the “mother of vinegar” which contributes to its cloudy nature and well touted benefit. While many consume cider vinegar mixed with water or by iteslf, it does make a lovely, sharp addition to pickles, ceviche, dressings, and marinades.
