Gravenstein Apple

The Gravenstein Apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it’s also not an apple that travels or stores well so it is best enjoyed during its relatively short season and isn’t typically shipped far. It’s grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream colored flesh. Our Gravenstein Apple White Balsamic marries the complexity of the Gravenstein’s larger than life flavor with our well balanced Ultra Premium White Balsamic Vinegar from Italy for a delectable culinary symphony. Blenheim Apricot

The Blenheim Apricot variety is both sweet and tart with an intensely floral aroma of honeysuckle flowers. We’ve married the lovely floral characteristics of this apricot with our Ultra Premium White Balsamic Condimento. The resulting collaboration is bright, clean and absolutely delicious! Great with grilled chicken/poultry, pork, in sparkling water as a spritzer, as a glaze, served with cheese, for dressing cut up fruit, in marinades and dressings. Pairs fantastically with Roasted Almond Oil or Portugal Cobrançosa, Spanish Picual, and so much more.

Aged Coconut

Our Coconut White Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of coconut. It makes a fantastic dressing or marinade and is divine paired with our Persian Lime, Onion & Cilantro Olive Oils or Toasted Sesame Oil.

This balsamic is progressively aged in wood barrels according to the Solera Method. It is PGI (Protected Geographic Indication) certified to come from Modena, Italy. 

Cranberry Pear

This White Balsamic is clean, crisp and very tart and boasts a lovely deep, rose blush. 

 

It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Use to dress fruit or vegetable salads, as a marinade, a glaze for poultry, with gelatin for a delicious fruit aspic or even in a mixed drink!  

 

Elderflower

This delicate Elderflower White Balsamic is crispy and juicy with a intense floral aroma of honeysuckle flowers. Pairs well with any Plain EVOO and Lemon Fused Oil. Great with seafood, pork, chicken and in sparkling water, cocktails, and ice teas.

Grapefruit

Made with Ultra Premium Certified White Balsamic, our Grapefruit Balsamic Vinegar sparkles with a crisp, clean citrus flavor. It has a perfect balance of acidity and natural sweetness. Try this lovely balsamic in dressings, marinades, with seafood, paired with fennel, as a glaze for poultry, or try a tablespoon added to sparkling water. It makes a show-stopping white balsamic grapefruit granita!

Honey Ginger

Honey and ginger plays well together and bring a gentle, spicy heat which balances perfectly with the moderate, natural acidity of our white balsamic vinegar. 

This condiment is superlative when paired with our Persian Lime Extra Virgin Olive Oil and positively shines with our Japanese Toasted Sesame Oil! Mix an amazing marinade with the vinegar, toasted sesame oil, our Garlic Extra Virgin Olive Oil and soy sauce. 

Sicilian Lemon

Playfully tart and pleasantly sweet, our Sicilian Lemon White Balsamic has a perfectly balance acidity and a crisp, lemon flavor and aroma.

Lemongrass Mint

 Our Thai Lemon Grass-Mint White Balsamic Condimento is tart, crisp, clean and absolutely delicious.  The natural flavors of Thai lemon grass and mint cooperate beautifully and make a dazzling base for marinades, dressings. 

 Use this Asian inspired marinade to dress your seafood salad, noodles or use for a dipping sauce.

Key Lime

Sweet, floral Key Lime White Balsamic.

Use in shrubs, marinades, cocktails, pickles, over berries or cut up fruit.  Makes a wonderful glaze or in marinades and dressings.  Excellent mixed with sparkling water for a refreshing, crisp beverage, to glaze poultry, seafood, vegetables, pork, and much more! Pairs well with lime olive oil, lemon olive oil, blood orange olive oil, Garlic Olive Oil, Gremolata Olive Oil, Toasted almond oil, Toasted Sesame oil, Lime Olive Oil, Baklouti Olive Oil, and any UP EVOO.

Ripe Peach

Made with White Trebbiano Grape Must, our White Peach Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy. 

Extremely adaptable, it can be paired with any of our Extra Virgin Olive Oils, as well as our flavored oils to make a light, tart vinaigrette. 

Pineapple

Our golden pineapple balsamic is sweet and tart with the heady aroma of fresh ripe pineapple.  This amazing, zesty balsamic is the perfect complement to fruit salads and fresh berries.  It adds substantial flavor without discoloring salads.

Pomegranate

This sparkling ruby jewel-toned white balsamic owes its tart, crisp flavor to Juicy California Pomegranates and Floral Winter   Quince. It’s made from authentic white balsamic condimento,   aged for up to 12 years in Modena, Italy.  Pairs beautifully with Blood Orange Agrumato Olive Oil, Persian Lime Olive Oil, and fruitier extra virgin olive oils such as Hojiblanca, and Picual. 

Umeboshi Plum
