Ultra Premium White Balsamic
Our Ultra-Premium White Balsamic is the highest quality white balsamic condiment grade in the world. It’s unique in North America and exclusively made for our discerning consumers from Italian Trebbiano, Albana, and Montuni grapes which add body, complexity, and richness that Trebbiano grapes alone cannot achieve. The grapes are entirely hand-picked by experienced workers who select only the sweetest clusters for maximum Brix content and created through natural fermentation. It contains a blend of white grape must with 100% Italian Barrel Aged White Wine Vinegar which are both made from Albana, Trebbiano and Montuni grapes grown in the region of Modena, Italy exclusively. The grapes are left to dry in the sun (a very old artisan method) for up to 15 days - an exclusive family practice of our balsamic maker. During this period, the natural sugar, flavor, and body in the grapes is enhanced. This proprietary drying period results in an approximate volume loss of 10% through evaporation. The traditionally cooked grape must is lightly filtered to remove any skins from the cooked must before being placed into new white oak barrels for maturation and aging to an amazing 1.28 density and 4% acidity. Certified to be free from any additives including thickening agents, sugar from sources other than grape must, colors, dyes, and preservatives.
Gravenstein Apple
Fabulous White Balsamic, bursting with intensity
The Gravenstein Apple is an incredibly hard to find varietal due to the difficulty farmers have cultivating it. In addition to contending with a very finicky tree, it’s also not an apple that travels or stores well so it is best enjoyed during its relatively short season and isn’t typically shipped far. It’s grown in pockets up the coast of Northern California and prized for its amazing ambrosia perfume, and crisp, sweet-tart cream colored flesh. Our Gravenstein Apple White Balsamic marries the complexity of the Gravenstein’s larger than life flavor with our well balanced Ultra Premium White Balsamic Vinegar from Italy for a delectable culinary symphony. Blenheim Apricot
The Blenheim Apricot variety is both sweet and tart with an intensely floral aroma of honeysuckle flowers. We’ve married the lovely floral characteristics of this apricot with our Ultra Premium White Balsamic Condimento. The resulting collaboration is bright, clean and absolutely delicious! Great with grilled chicken/poultry, pork, in sparkling water as a spritzer, as a glaze, served with cheese, for dressing cut up fruit, in marinades and dressings. Pairs fantastically with Roasted Almond Oil or Portugal Cobrançosa, Spanish Picual, and so much more.
Aged Coconut
Our Coconut White Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of coconut. It makes a fantastic dressing or marinade and is divine paired with our Persian Lime, Onion & Cilantro Olive Oils or Toasted Sesame Oil.
This balsamic is progressively aged in wood barrels according to the Solera Method. It is PGI (Protected Geographic Indication) certified to come from Modena, Italy.
Cranberry Pear
This White Balsamic is clean, crisp and very tart and boasts a lovely deep, rose blush.
It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Use to dress fruit or vegetable salads, as a marinade, a glaze for poultry, with gelatin for a delicious fruit aspic or even in a mixed drink!

Ripe Peach
Made with White Trebbiano Grape Must, our White Peach Balsamic undergoes the cooking and barrel aging process of Balsamic Vinegar of Modena but is not caramelized therefore it retains its white color. The result is a crisp vinegar with a touch of sweetness reminiscent of handcrafted vinegars from northern Italy.
Extremely adaptable, it can be paired with any of our Extra Virgin Olive Oils, as well as our flavored oils to make a light, tart vinaigrette.
Pineapple
Our golden pineapple balsamic is sweet and tart with the heady aroma of fresh ripe pineapple. This amazing, zesty balsamic is the perfect complement to fruit salads and fresh berries. It adds substantial flavor without discoloring salads.

This sparkling ruby jewel-toned white balsamic owes its tart, crisp flavor to Juicy California Pomegranates and Floral Winter Quince. It’s made from authentic white balsamic condimento, aged for up to 12 years in Modena, Italy. Pairs beautifully with Blood Orange Agrumato Olive Oil, Persian Lime Olive Oil, and fruitier extra virgin olive oils such as Hojiblanca, and Picual.
Umeboshi Plum

Our Denissimo is made from Trebbiano grape must which is naturally caramelized and cooked down to an even greater extent, and aged for EVEN longer in the traditional “Batteria” of Modena. Our exclusive “Denissimo” contains less than 1% barrel aged Italian red wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper, and cherry wood. This exquisite and exceedingly rare 1.36 density balsamic is extremely complex boasting flavor notes of cherry wood, dried fruits, raisins, figs, along with hints of dark chocolate and malt. 4% acidity

Our finest grade of aged balsamic condimento from Modena, Italy is produced in the Traditional Style. It is aged using the Solera System for up to 18 years in chestnut, oak, mulberry and ash barrels. With 4% acidity, it exceeds Four Leaf Quality with an astonishingly high natural density of 1.28+. This spectacular density comes naturally without thickeners or added sugar, from a lengthy aging process and cooking in copper kettles. It is exceedingly rich, complex and dense and pairs beautifully with any olive oil in our collection. Use for vinaigrettes, glazes, marinades, bread dipping, drizzling over fruit, vegetables or to marinate meat and poultry.
Blackberry Ginger
Sweet and pleasingly tart, redolent with the exotic, spicy flavor of ginger and married with rich, ripe juicy blackberry.
